“ A Cut Above – Stylish new burger restaurant opens its doors intent on revitalizing the dining scene in the Granville Entertainment District”

On Wednesday, February 16th, StackHouse Burger Bar opened its doors quietly to much anticipation from the small group of people who had been following the restaurant’s progress on various social media sites. From the moment the paper came down, curious passers-by and friends and family filled the seats perusing the mouth-watering options of a menu burger lovers in Vancouver have never seen the likes of.

A week later, they threw a spectacular opening party complete with DJs, free beer and bourbon shots and their much heralded burgers. It was standing room only from 6pm until midnight and it was a very good sign of things to come.

The space, which features a beautiful White Oak bar top with matching tables, uniquely fabricated bar shelving, and enormous kitchen divider wall, is a collaboration between the owners and Vancouver designer Craig Stanghetta (Meat and Bread, Bao Bei and the Light Installation at L’Abbatoir)

Stanghetta’s aim with this design was “to be contemporary and clean without being irreverent”, and ideally to “…create the allure of comfort whilst enjoying a carefully crafted cocktail, or feasting like a glutton.”

Indeed, it is a concept that does not conform to the standard North American idea of what a burger joint should look like. Instead it brings a little of that “Gastown Chic” to the Granville Strip that has made so many new Gastown restaurants instantly popular with great design, unpretentious yet attentive service, and outstanding quality of food. Granville Street needs more of this kind of dining option.

The menu, conceptualized and executed daily by Chef Shahab Ghaemi (formerly of Crime Lab, Century House and Lucy Mae Brown), is a testament of his true dedication to the quest for the “Perfect Burger”. With ten on offer, as well as one foot-long “Euro-Dog” and three slider options, there is surely something on his menu for everyone. Surprisingly unique salad options, truffled poutine with bocconcini and perfectly crisp onion rings with one of the house-made aiolis (Cilantro, Miso, Truffle, and Chipotle) round out the selection.

Using only the finest, locally sourced (whenever possible and in season) natural ingredients, Ghaemi’s burgers feature Washington Kobe-Style beef and Alberta AAA freshly-ground prime rib as well as Fraser Valley free-range chicken breast, Pacific Yellowfin (Ahi) Tuna and West Coast Dungeness crab. All burgers, sliders and the Euro Dog come on fresh daily baked brioche buns.

Toppings such as Guinness Cheddar, Pancetta (no bacon here!), watercress, fried fennel and more contribute to the gourmet approach to burgers, that until now, hasn’t really been seen in Vancouver.

Behind the bar, you will find a carefully chosen selection of craft beers, a very impressive line-up of Bourbon whiskeys (4 and counting…) and an enticing cocktail list created by Bar Manager Derek Vanderheide (formerly Shangri-La, and Diva at The Met ). Highlights include “La Louisiane” (Rye, Italian vermouth, Benedictine and an absinthe wash) and “La Fleur Eshkoshka” (Gin, St. Germain Elderflower liqueur, orange blossom water, grapefruit bitters and lemon juice).

Hitting all the right notes, and with a solid fan base (some regulars have been in EVERY DAY since they opened!) this restaurant is sure to succeed in blowing away the competition - if there is any. StackHouse’s consistently delicious food, daily drink features and casual, personable service will have you coming back for more!
